A dutch oven turns an ordinary home oven into a credible imitation of a professional steam-injected deck oven, and it is the difference between a pale, tight loaf and one with a blistered, deeply colored crust and a dramatic rise. Here is why it works, exactly how to run the preheat and the lid timing, and how to fix the two problems — burnt bottoms and awkward loading — that trip people up.

Professional bread ovens do two things a home oven cannot: they deliver intense, stable heat from a thick stone deck, and they inject steam into the chamber during the first minutes of the bake. That steam matters enormously. A wet crust stays flexible, so the loaf can keep expanding — the burst of growth called oven spring — instead of setting into a rigid shell in the first two minutes. Steam also dissolves surface starches, which later caramelize into that glossy, crackled, deep-mahogany crust.

A home oven vents moisture constantly, so pans of water and spray bottles mostly fail. The dutch oven solves the problem by shrinking the chamber: the loaf steams itself. Dough is roughly 70% water in a typical formula, and in a sealed pot the moisture evaporating off the loaf's own surface has nowhere to go. Preheat: Temperature and Timing

For the classic method, the pot preheats empty, lid on, so the cast iron is fully charged with heat before dough touches it.

  • Temperature: 245-260°C (475-500°F) for the preheat and the covered phase. Check your pot's knob rating — many enameled lids carry phenolic knobs rated to 230°C (450°F); swap in a metal knob or remove it and plug the hole with foil.
  • Time: 45-60 minutes with the pot in the oven from the moment you turn it on. Ovens signal "preheated" when the air hits temperature, but cast iron lags well behind the air. A pot that has soaked for a full hour bakes noticeably better than one snatched at the beep.
  • Rack position: middle or one notch below. Too low and the bottom crust takes brutal direct heat from the element — more on that shortly.

While the pot heats, your shaped loaf can come straight from its overnight fridge retard. Cold dough is a gift here: it holds its shape, resists the shock of the hot pot, and scores far more cleanly than room-temperature dough.

The Parchment Sling: Load Without Fear

The scariest moment of dutch-oven baking is lowering soft dough into a 250°C pot. The parchment sling removes the fear and the burns. Cut a sheet of parchment several centimeters wider than your loaf on two sides, flip the proofed dough out of the banneton onto the parchment's center, score it, then grip the two long edges like handles and lower the whole package into the pot. The parchment stays in for the bake; the slight ripple it leaves on the lower crust is invisible by the time the loaf browns.

Lid-On, Lid-Off: The Timing That Matters

The bake runs in two acts:

  • Act one — lid on, 20 minutes at 245-260°C (475-500°F). This is the steam phase. The sealed pot traps the loaf's moisture, the crust stays supple, and oven spring does its work. Resist the urge to peek; every lid lift dumps the steam you built.
  • Act two — lid off, 20-25 minutes at 220-230°C (425-450°F). Remove the lid, drop the temperature, and let dry heat do the browning. The crust dehydrates, Maillard reactions and caramelization build color and flavor, and the surface sets into its final crackle.

The loaf is done when the crust is a deep chestnut brown — darker than most beginners dare — and the internal temperature reads 96-99°C (205-210°F). Total bake time for a 900 g boule lands around 40-45 minutes. Then the hard part: rest the loaf on a rack for at least an hour. The crumb is still setting as steam redistributes; slice hot and you get gummy bread and a compressed slice, no matter how perfect the bake.

If your lid-off phase browns the top long before the 20 minutes are up, your oven likely runs hot — shade the loaf loosely with foil rather than pulling it early, because an underbaked interior is worse than a dark crust.

Avoiding Burnt Bottoms

The most common dutch-oven complaint is a bottom crust that crosses from well-baked into carbonized. The cause is simple: the pot's base sits closest to the oven's heating element and absorbs radiant heat directly. Fixes, in order of effort:

  • Raise the rack. Moving the pot one position higher is often the whole solution.
  • Add a buffer. Slide a sheet pan, pizza stone, or baking steel onto the rack below the dutch oven to intercept direct radiation from the element.
  • Insulate inside the pot. A layer of coarse cornmeal or semolina under the parchment, or a trivet of crumpled foil beneath the loaf, lifts the dough a few millimeters off the hottest metal.
  • Drop the floor heat late. Some bakers slide the pot onto a cold sheet pan for the lid-off phase, once oven spring no longer depends on bottom heat.

If the bottom is burning while the crumb is still underdone, treat it as a rack-position problem first and a temperature problem second.

The Cold-Start Alternative

The preheated method is the gold standard, but there is a gentler path: put the loaf into a cold dutch oven, lid on, place it in a cold oven, set the temperature to 245°C (475°F), and start the clock when you turn the dial. Bake roughly 50-55 minutes lidded from cold, then 10-15 minutes uncovered to finish the color.

What you trade and what you gain:

  • Gain: no handling of screaming-hot cast iron, no risky loading, kinder treatment of enamel, and a genuinely good loaf — the long, slow climb still traps steam as the dough heats.
  • Trade: slightly less explosive oven spring and a marginally thicker crust, since the dough spends longer in the warm zone before the crust sets.

Caring for the Pot

Enameled cast iron shrugs off bread duty for decades with minimal care: no thermal shocks (never set a hot pot on a wet surface or drop cold dough into it and then run it under water), no metal scouring on the enamel, and no need for seasoning. Baked-on parchment residue lifts with a soak and a nylon brush. Bare cast iron combo cookers want a thin re-oiling after washing. What size dutch oven is best for sourdough?

A 5-7 quart round pot handles the standard 800-1000 g boule with room for oven spring. Bigger is fine — the loaf does not care about extra headspace — but much smaller than 4 quarts risks the risen loaf touching the lid and burning. For batards, an oval pot or a cast iron combo cooker with a shallow base makes loading and scoring easier.

Do I really need to preheat the pot for 45 minutes?

For the classic method, yes — the beep on your oven means the air is hot, not the iron. Cast iron absorbs heat slowly, and an under-heated pot gives weaker oven spring and a paler bottom crust. Why is the bottom of my loaf burning?

The pot base absorbs direct radiant heat from the lower element. Move the pot to a middle or upper-middle rack, put a sheet pan or baking stone on the rack beneath it as a shield, and add a layer of cornmeal or a foil trivet under the parchment. Between rack position and a buffer, nearly every burnt-bottom problem disappears without changing oven temperature.

Can I bake sourdough without a dutch oven at all?

Yes, but you must create steam another way: a baking stone or steel plus a preheated pan of lava rocks or a rolled towel that you douse with boiling water at load time, with the oven door kept closed for the first 15-20 minutes.
